Tor Tau Piah (Chinese Peanut Cookies)

I grew up eating this classic cookie in Malaysia.  My mom's recipe is similar to those online but the best quality is the one that melts in the mouth.

The ingredients are as follows:

Cookie dough :
300g all plain flour
300g raw ground peanuts 
150g ground peanut oil (use the vegetable oil if you don't have the ground peanut oil)
110g fine sugar (or just plain sugar is ok)
a pinch of salt
a pinch of baking soda

Egg wash : 
an egg yolk


Steps

1.   Roast the raw peanuts in the oven for 15 minutes.  Let them cool for 40 minutes.  Remove the skins.  Then, grind the peanuts until they are coarse, not smooth.

2.  Mix all ingredients together (minus the egg) in a bowl and gently stir the mixture until it turns into a cookie dough.  The baking soda makes the cookies crunchy.

3.  Make small balls and place them on a non-stick baking tray (or grease your ordinary tray with the oil).

4.  Gently brush the egg wash on the balls.  Then, use a drinking straw to make a light dent on the balls (skip this part if you wish).

5.  Place the tray in the oven and bake for 13 minutes exactly.

6.  Remove the tray from the oven and let the cookies cool down for at least 30 minutes.  Enjoy your hard work!!!
